Based on the Oakham Enterprise Park, just outside Oakham, in purpose built air-conditioned kitchens, Rutland Cookery school offers over 30 different courses that are either skills-based or cuisine-based. Courses such as; Game, Bread, and Fish masterclasses, Afternoon tea, BBQ and Patisserie, and a range of cuisines from Mediterranean to Moroccan, Spanish café to South East Asian, and Indian Street Food to Taste of Thailand.
The school has been established by chef Robin Stewart. Robin has over 30 years’ experience as a professional chef and is passionate about good quality ingredients and great tasting food. He loves nothing more than to help others develop skills in the kitchen, passing on hints and tips, techniques and short cuts which he has learned from working in some of the World’s top 5* kitchens. Robin’s approach is not just to teach recipes and techniques however, but also a thorough understanding of the ingredients, flavours and culture of the cuisine, often assisted by video clips of the food being prepared in the country of origin. Finally, he will show you how to style the food on the plate. Robin has a very calm, patient and encouraging teaching style, so no matter what level of skill or experience you have, you are sure to gain the maximum benefit from your course.
Rutland Cookery School offers full day and half day workshops. There are a maximum of nine people on any course which enables individual attention to be given when needed. All ingredients, aprons and equipment are supplied and at the end of the day you will be sent an email containing all the day’s recipes. Students work individually at their own, fully equipped workstation. Everyone cooks the same dishes, working at the same pace with each stage clearly demonstrated and explained. The emphasis of the workshop is not on slavishly following a recipe but on developing your own personal taste, judgement and techniques.
On the full day courses, you will eat some of what you cook for lunch or, in the case of bread and baking courses, you will be supplied with a light lunch and your items will be taken home.
Whether you are an amateur or a keen cook your confidence and skill levels will be increased by attending one of these courses.
